Gentle Chicken, Broccoli & Cashew Soup

Lean chicken provides easy-to-digest protein, broccoli is cooked until soft to reduce bloating, and cashews create natural creaminess without dairy. Warm, blended foods are gentle and comforting for digestion.

Ingredients

  • 1 chicken breast

  • 1 whole broccoli

  • 3 tbsp raw cashew nuts

  • 2½–3 cups low-salt chicken stock

  • 1 tsp olive oil (optional)

  • Pinch of sea salt (optional)

  • Black pepper (optional)

How to make

  1. Soak the cashews in warm water for 10–15 minutes, then drain.

  2. Place the chicken breast in a saucepan, cover with water, and simmer gently for 12–15 minutes, until cooked through. Remove and shred or chop.

  3. In a separate saucepan, add the broccoli to water and cook for 5–7 minutes, until very soft.

  4. Add the chicken, broccoli, soaked cashews, and chicken stock to a blender. Pour in 2–3 cups of the cooking liquid (from either the chicken or broccoli) and blend until smooth and creamy.

  5. Adjust the thickness to your preference by adding more cooking liquid if needed.

  6. Return the soup to the pot if desired, warm gently, and season lightly with sea salt.

  7. Serve in a bowl and finish with a drizzle of olive oil or a small amount of grated Parmesan.
