1 cup carrots, chopped
½ cup red lentils, rinsed
1 tbsp olive oil
½ tsp ground cumin
½ tsp ground turmeric
3 cups vegetable broth
Sea salt, to taste
Heat olive oil in a pot over medium heat.
Add carrots and cook for 2–3 minutes.
Stir in lentils, spices, and broth.
Simmer for 15–20 minutes until soft.
Blend lightly or fully, as preferred.
