1 salmon fillet
1 cup roasted carrots or sweet potato
½ cup steamed spinach or kale
1 tbsp tahini
Juice of ½ lemon
Warm water + pinch sea salt
Bake salmon at 180°C (350°F) until just cooked, approx 12-15mins.
Roast vegetables until soft and steam greens gently.
Whisk tahini, lemon juice, warm water, and salt.
Plate vegetables, top with salmon, and drizzle sauce.
